Most Truimphant Pasta and Asparagus

Hola, amigos!

Have you guys tried Glo bars yet? I think I'm obsessed! Yesterday I had the Adore bar, and it was oh-so good! Just thought you should know!
I was in the kitchen last night getting ready to make dinner when I noticed that my MIL had Bill and Ted's Excellent Adventure playing on tv. Bill and Ted lingo brain washed me, and I was cracking up as I cooked. I tried a new recipe I found in Vegetarian Times. I changed it quite a bit though. Excellent!

It was a recipe for a tofu based pasta sauce with tomatoes. The flavor was most excellent, but the texture was heinous. It may be the extra things I put in, or it could be that I used smoked tofu instead of baked. Oh well. Here's what I ended up making.

Sneaky Tofu Pasta Sauce with Tomatoes
4 oz smoked tofu
2 chopped tomatoes
1 chopped zucchini
1 big handful fresh baby spinach
2 spoonfuls of tomato paste
a sprinkling of parmesan cheese
and 2 spoonfuls homemade pesto

Put all of this into a food processor with 1/2 cup hot water and blend until smooth. (mine never got very smooth, it stayed kinda grainy)
I made some whole wheat pasta and had it ready to go. Once the sauce was pureed to my (almost) liking I dumped it over the pasta.


At this point I added 2 more diced tomatoes and a small handful of fresh basil leaves to the pasta/sauce. I mixed it all until it was hot.

Ready to serve!

For a side dish i made roasted asparagus. I heated the oven to 350*, and washed and cleaned up the asparagus.

I put it on the baking sheet (I always use a silpat) and drizzled it with olive oil, then sprinkled it with s&p. Into the oven it went! My asparagus were very thin, so it didn't take long, maybe 10-15 minutes. Larger asparagus would take longer.

While this was baking I made (another) fruit salad.

Today's had casaba, peach, mandarin orange, strawberry, blueberry, and mango. YUM!

Put it all together, and it's a most triumphant meal!

It all tasted excellent, and I felt like I could have been Chef Van Halen or something. (Ok, that was just silly, I know.) I would like to try this again with different tofu to achieve a better texture to the sauce, but all in all I really liked it!

I think I'm getting braver in the kitchen. Yeah, this didn't turn out perfectly, but I think it could be awesome with a bit of help, and I had fun experimenting. Must do this more often! So, here I leave you.

  2. Thanks! I was trying to come up with something good, name wise, and I thought this up at like 3 am and had to get out of bed to write it down so I didn't forget it! I am having so much fun experimenting in the kitchen! Writing a blog is really inspiring me to try harder, make more stuff. I had a Glo bar for breakfast today! It was the peanut butter hemp seed one. That, and the spelt cranberry apricot one are my favorite so far. The others are all really good, but a little bit sweet. Thanks for the comments! Keep 'em coming!
