Everything Cookies

While working at the bakery I decided we needed a healthy-ish cookie. I know, sacrilege. It's mostly because I felt terrible about all the butter and sugar I was eating during my frequent "quality control" moments. Now I just continue making sure every batch of these babies is just right! I finally came up with this recipe. Hope you enjoy it!
Everything Cookies:
3/4 cup oil
1/4 cup butter
1/4 cup sugar
1 cup brown sugar
1/2 cup peanut butter
2 eggs
2 tsp vanilla
1/2 cup flour
1 cup whole wheat flour
1 tsp baking soda
1 tsp salt
2 cups oats
1 cup shredded coconut
1/4 cup each flax, sunflower, sesame, pumpkin, and poppy seeds
Pre-heat oven to 350*

In a mixer combine oil, butter and sugars. Mix until smooth. Add peanut butter, blend, add eggs and vanilla and blend again.

In a separate bowl combine all dry ingredients. Add to wet ingredients and mix thoroughly. Use an ice cream scoop for large cookies, or a mini scoop for smaller ones, and scoop onto a lined baking sheet. Gently smoosh each scoop of dough to flatten it slightly.

Bake 16 minutes for large "ice cream" scoops. Adjust time if size is different. Let cool on tray.
Now chow down! These let you feel like you're eating a cookie, while giving you all sorts of healthy seeds, plus oats and peanut butter, and almost no butter! Not so bad!
Nom nom nom! No, those aren't crumbs on my shirt! I'm saving some cookie for later! YUM!
