I'll start off with this sweet potato enchilada recipe, because I already managed to make it! These enchiladas are amazingly good! And don't be afraid of the sweet potato, the sweetness and texture make this a winner!
Here is a recipe using kelp noodles, which I had never heard of before. I'll be looking for these at my local natural foods store next time I go!
With Chocolate Covered Katie vegan desserts abound. This vegan peanut butter cup pie makes me drool!
I have always wanted to make real caramels, and this seems like the perfect recipe! These might end up in my holiday gift baskets!
Butternut squash and pumpkin recipes are popping up everywhere in the blogosphere these days. I found butternut squash and apple soup, butternut squash ravioli, pumpkin pancakes, a butternut squash smoothie (which I have actually tried, and LOVED!), and pumpkin spiced nutty granola.
To continue the Fall feeling here's a beautiful apple tart tatin, turnip potato fritters, cinnamon crumble bread, and some whole wheat sweet potato muffins.
Comfort foods are abounding as the weather is turning cooler, and I start craving heartier foods. This Moroccan vegetable stew sounds like the perfect thing for a rainy day. These garlic knot rolls would probably be amazing with the stew!
What? Time for dessert? OK! I'd never say no to dessert! This chocolate chili tofu pudding sounds so intriguing, and I do have some silken tofu lurking in my fridge! Or how about some 3 minute vegan maple oatmeal cookies? YUM! And finally, this decadent show stopper, the no-bake tiramisu cheesecake! I am dying to make this one!!!
