Breakfast for Dinner:Best Pancake Recipe Ever!

Hello friends! Sorry it's been a few days, things have been busy around here! As usual.

This weekend was really fun, but non-stop action! Saturday Ben and I went to Vancouver Island after an 8 hour shift and 1 hour of sleep. Hmm, not really the best planning there. We really enjoyed the Saanich fair though, especially their farmers market! We also ran lots of errands and got a lot done. Needless to say we slept VERY soundly that night!

Yesterday, Sunday, Ben and I went on the Eco tour here on Pender. This goes on every year, and allows people to visit homes on Pender that are eco-friendly. We missed a few of the houses on the tour, but the ones we did see were really impressive! I'll put up a post specific to that tour later. It was so inspiring!

Because of our busy schedule Ben and I have been a little lazy on the dinner front. What do we fall back on when we are tired and need comfort food? Breakfast! Here are a few dinners we've had lately, just some ideas for you.

Last week Ben made french toast for dinner. It was SO good! He used some whole wheat sourdough we had sitting around. The liquid was your basic milk and eggs with a little vanilla stirred in.
He let the bread soak for quite a while, then put it into the hot frying pan.
While he was taking care of the bread I made a syrupy sauce from some local blueberries. I put about 2 cups of fresh berries into a pot and mashed them up a bit.
I added about 1/3 cup sugar and a splash of maple syrup. I cooked it down over medium heat until it started to bubble, then added a small amount of corn starch mixed with water to thicken it.
Ben finished up the french toast and I cut up some casaba melon. With some fresh blueberries and a spritz of lime juice it was the perfect side salad.
Now that's what I call dinner! hehe. It was just what we wanted after a long day!
Another breakfast-for-dinner we had just last night after the eco-tour was pancakes. Ben gave me the BEST pancake recipe ever, so to the kitchen I went!
This recipe is beyond simple. It really doesn't take any more effort than measuring mix out of a box. It's also a great base recipe, and you can add whatever you want! I added blueberries, but you could use whole wheat flour, add ground flax seeds, add other fruit...anything!

Ben's Easy Pancakes
1 cup flour
1 Tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
1 cup milk
2 Tbsp oil

Mix the dry ingredients together, then in a separate bowl mix together the wet ingredients. Add wet to dry and stir until slightly lumpy. Cook pancakes in a hot and lightly-greased or buttered skillet. Makes 8-10 standard sized pancakes.
I added 2 good handfuls of blueberries, and I used coconut oil in the pan instead of vegetable oil.
I also scrambled a few eggs, and browned some veggies links. Yum!
Ok, not into breakfast for dinner? Here's something quick and easy that we had last week. Pizza bread!
We had a baguette sitting around, so I cut it into personal sized sections, and then split each piece in half. Ben helped me, and we mixed some pesto with a little bit of tomato paste. That got smeared on the bread, and was topped with grated cheese, kalamata olives, fresh basil and a sprinkling of feta.
We set them on a lined baking sheet and put them in a 400* oven until they were warmed and browned.
With a little sauted zucchini from the garden on the side this made a nice easy meal. I also made a quick green salad with a little cabbage, and some bean salad on top. It was all really tasty too, especially with our own fresh basil!

So when you don't know what to make for dinner, consider breakfast, or easy pizza bread! Just putting it out there! Let the laziness begin!

  3. It really makes a great tasting easy sauce. Bit more interesting than regular old red sauce.
