Blueberry Sherbet

Happy Friday everyone! The sun is shining, I only have one work shift left before the weekend, and I just demolished a bowl of creamy sherbet bursting with fresh blueberry flavor. Life is good!
We still have quite a lot of blueberries from our picking adventure down the road, so I used them to make Cathy Burgett's berry sherbet. I seriously love that woman! Not only was she the best baking instructor EVER, but she is a wonderful friend, and made us the best wedding cake of all time! I have sometimes considered asking her to adopt me.

I actually made two attempts at this sherbet. The recipe calls for Creme de cassis, or black currant liqueur. We didn't have enough, so I thought (ok, so I didn't really think) I would use blackberry brandy to fulfill the amount needed. BAD idea! The brandy was so terribly strong, it was like booze sherbet that I accidentally dropped blueberries into while inebriated! Not really the best.
So, I tried it again. I told you we had a lot of berries sitting around! This time I didn't use any liqueur at all, mostly because I used it all up last time. The texture was slightly different, but still nicely creamy, with a ton of real berry flavor. I love it!!! I have been eating it non-stop! Good thing my PJ's have an elastic waistband!

Cathy's berry sherbet
3 cups blueberries (or 1 lb.)
1/2 cup creme de cassis
2 Tbsp lemon juice
1/2 cup superfine sugar
1/2 cup heavy cream

-Put washed blueberries in a blender or food processor with the sugar and blend until smooth.
-Strain to remove seeds and skins.
-Add lemon juice, liqueur and cream. Stir to combine.
-Freeze in an ice cream maker according to manufacturers instructions.
-Remove to the freezer and freeze until firm before serving.
Seriously. That's it! You could use any type of berry! I really want to try this with raspberries, and maybe swirl in some fudgyness too. Could be good!

Tomorrow we are off to the Saanich fair on Vancouver Island. It rained last year, so this time it's sure to be better. I am particularly excited about the fantastic farmer's market that is a part of the fair! I hope to be coming home with a huge load of produce! Can't wait!

  8. The color is so pretty! I was also inspired to dig out my ice cream maker to make some cinnamon gelato over the holiday weekend! Now that the ice cream maker is on the counter, need to put this on the list for next Sunday!!

  10. We resurrected our ice cream maker from the basement to make Foodalutions Blueberry ice cream.
    Your pictures are amazing. Making ice cream is sooo dangerous for one's waistline, because then you end up eating all of it, but it's so yummy.

  14. Wendy- I hope you try it out! Having the ice cream maker out is a dangerous thing! I have made 6 types of ice creamy things in the last month! Yikes! Your cinnamon gelato sounds amazing though!

    Alchemy-fabulousfood- You should totally break it out and try something! There are some really fantastic recipes out there! Try David Lebovitz dot com. He is the ice cream master!

    Everyone-the color was just the beginning! This was SO delicious! Very counterproductive to the whole eating healthy/losing weight thing, but some things are just that important!
