Peppermint Patties

Happy Sunday! Yup, it's still the weekend. This is a good thing! I am gearing up for my second craft fair of the year, it's this coming weekend! I'm still pretty well stocked from the last one, but I need to make more turtles and truffles. I also (unfortunately) went to the cake decorating store and started hemmorhaging money. This means I have lots of new toys! I got some more chocolate molds, this time in sucker form. I bought some of those nasty colored melts to fill in the pictures on top, then I'll fill the bulk of the mold up with real chocolate. Hope they turn out!

Today I wanted to share another candy recipe with you, so you can start gearing up for the holidays too! Peppermint is good year round, but always seems most appropriate during the holiday season. So here's the recipe for peppermint patties! It makes a lot, but that way you can mess some up, eat lots, and still have some to share!

Chocolate Peppermint Creams (from 1,000 chocolate, baking and dessert recipes)
1 egg white
2 cups confectioners' sugar, plus extra for dusting
few drops peppermint oil (I used about 1/2 tsp to make it really strong)
7 oz semisweet chocolate, broken into pieces

-Line a cookie sheet with parchment paper. Whisk the egg white until stiff.

Gradually sift in the confectioners' sugar and mix together to form a firm, pliable mixture.

Add the peppermint oil to taste and mix well.

-Lightly dust a cutting board with confectioners' sugar, turn out the mixture, and knead for 2-3 minutes.

 Roll out to a 1/4" thickness,

then cut into circles, using a 1" round cutter. (I used a ravioli cutter!)

-Transfer to the prepared cookie sheet and leave for about 24 hours, or overnight, until set and dry.

- Temper your chocolate, and gently dip each peppermint in using a fork. (They do become a bit brittle, so be very careful. Broken means "sample" in my book!)  Lift out quickly, letting any excess chocolate drain against the side of the bowl, and place on the prepared cookie sheet. Let set.

Now you can eat them, package them, gift them, potluck them, sell them at the craft fair or leave some out for Santa to supplement the cookies!

Now it's time to do some chores (oh joy), and then make some truffles (oh JOY!). Christmas music might help the process. Nobody's home, so I can listen to it LOUD while wearing my Santa hat! Don't tell, ok?
